Recipe Roundup

December is in full swing, which means a bigger TO DO list.  It also means less time for healthy eating, right?  Not so!

I’ve rounded up seven easy, whole food, gluten free meals you can make with little prep time!  These are all recipes I made this month whilst in the midst of home renovating.

It all started when we decided to get new carpet installed. But before the carpet, I needed to repaint the master bedroom and the staircase, which were in dire need of some TLC.  Then the beautiful new carpet arrived, and the couch looked horrendous.  And so began the downward spiral.  Replace one thing and you have just started a dance with the DIY Devil, my friend, because everything else looks horrible next to the new shiny improvement.

Before: The cherry finish looked outdated and the carpet was gross.  Not the first impression I want to make when guests walk into the house!

 I love how the white balusters and board and batten wall make one unified statement.

I read several blogs from crazy people individuals who painted their staircases.  I thought, “If they can do it, so can I!”

I quickly realized that those individuals were a) professional stair painters, or b) into self-torture.

Unfortunately, once you start sanding, there’s no going back!

I’m so happy with how it turned out, but the staircase is definitely the hardest home project I’ve done to date.

Mark my words: For the love of all that is holy, I will never paint stair bannisters again!

*Throws head back and shakes fist in the air.*

Curse you, Pinterest Gods!

Whew! I feel much better.

What was life like before Pinterest?  I shudder at the thought.


Burrito Bowl with Creamy Chipotle Sauce from The Garden Grazer.  So quick and easy, and you can add any veggies to your bowl.

Spinach Artichoke Pizza from Cooking Classy. I made my own pizza crust using Pamela’s gluten free flour.  That part was a little time consuming (waiting for the dough to rise), so this makes a good weekend recipe.

Grilled Eggplant, Halloumi, and Pesto Burgers from Veggie Belly.  These are the most amazing burgers.  I like them even better than traditional burgers.  Eggplant makes a substantial “patty”, and the pesto/cheese combo really brings it home.  I used mozzerella cheese instead of halloumi.


Crockpot Red Beans and Rice from Little Magnolia Kitchen.  This is my family’s favorite recipe in the group, and it’s super easy to throw together.

Crockpot Chicken Philly Sandwiches from Food, Family, and Finds, and Sweet Potato Fries from Petite Allergy Treats.  We will definitely have these sandwiches on a regular basis, and these fries are my new fave.  Also good with the eggplant burgers!

 Slow Cooker Pulled Pork Sandwiches from Flour on My Face with KFC Coleslaw from the Make Your Own Zone.  Five simple ingredients for the pork sandwiches, and coleslaw with homemade dressing.  Win!  

Lemon and Garlic Chicken from The Londoner,  with Roasted Acorn Squash from The Curvy Carrot.  This is the best oven chicken I’ve had.  So flavorful.  And if you’ve never tried acorn squash, be brave and give it a shot!  You won’t regret it.
